My Saturday breakfast – Coconut omelette with
banana and blueberries . With
natural yogurt and honey. As usual without
flour or any similar poisonous ingredients :)
I’ve been
very busy lately and completely didn’t have
time to take photos of food, not even mentioning catching the daylight. I leave house when it’s still dark and come back late at night. Playing with softbox has became little bit boring, probably because I haven’t mastered it yet and photos are not so good as like with natural light (if that’s even possible). That’s my little excuse for the past week :)
When it comes to the recipe – Coconut omelette with
banana and blueberries is a delicious idea for begining of the day. My flourless omelette consists of eggs,
natural yogurt and shredded coconut. If you don’t have experience in preparing flourless omelettes, I advise to be
very carefull with flipping it and basically moving from the pan to the
plate :) Okay, enough of this talking, let’s take a look at the recipe!
Coconut omelette with
banana and blueberries

Omelette
3 eggs
little bit of vanilla extract
½ teaspoon
stevia extract
1 tablespoon
natural yogurt30 g shredded coconut
1 teaspoon coconut oil
Addons
2 tablespoons
natural yogurt1 tablespoon honey
handfull of blueberries
bananaPrzygotowanie
In a small bowl mix ingredients for the omelette: beaten eggs, vanilla extract,
natural yogurt, shredded coconut.
Melt coconut oil on a small pan without preheating it too much.
Pour mix from the bowl into the pan and fry on a low heat around 7 minutes, do not
move or touch the omelette.
Carefully flip the omelette helping yourself with a
plate. Fry for around 3 minutes.
Put the omelette onto a
plate, add
natural yogurt, pieces of
banana and blueberries.
Pour honey onto the omelette and garnish with shredded coconut.
