When he’s not performing for millions of fans, the Canadian crooner is often entertaining a small crowd of friends in his kitchen, serving up batches of his famous chicken wings or bowls of his vegetable risotto. „I love to cook!” says the Grammy nominee, who mainly splits his time between houses in his hometown Vancouver and L.A. „I’m a big foodie.”
After moving out of his parents’ home, he quickly realized that he’d better learn his way around a stove – or else. „I didn’t want to starve and I was tired of macaroni!” Bublé, 35, recalls with a laugh. „So I’d go to my parents’ house and watch my mom cook.” Bublé has also found kitchen mentors in his Uncle Kelly, a chef, and his grandmother Yolanda Santana. „When I call her and say, ‘How much do I put in?’ she’ll say, ‘Honey, just throw a handful.’ There’s nothing written down.” Which explains Bublé’s improvisational style of cooking: „I cannot follow a recipe. You just feel it.”
One recipe he won’t mess with: his family’s legendary wild salmon fillet (see recipe, page 21). „My father was a commercial salmon fisherman and so was my grandfather”, says Bublé, who turn grew to be very particular about the pescatarian plates he ate. If it’s meatier fish like bass or cod, „it’s got to taste like chicken,” he insists. When it comes to cooking wild salmon, Bublé prefers to use his family’s easy marinade: „The simpler, the better”.
Despite all his epicurean expertise, Bublé admits he’s still got a lot to learn – including how to make an omelet. „Everytime I try to flip it, I kill it!” he says. That’s when his fiancée, Argentinian actress Luisana Lopilato, 23, steps up to the frying pan. „The other day she made me an omelet with peppers, avocados and cheddar. It was beautiful,” says Bublé, who returned favor by introducing her and her family to another American breakfast staple: French toast with maple syrup. „They were crazy for it!” He says. „You don’t have to be fancy. Just use wonderful ingredients to get the best food.”
His Kitchen Must-Haves
Along with having an iPod speaker on the counter so he can chop to the rhythms of his favorite bands, Bublé keeps his pantry and drawers stocked with seasoning salts and pepper. „I like a lot of flavor,” says Bublé. As for his fridge: „It’s always nice to have five or six lemons just in case, for cooking or to make a drink.”
Tips for Playing Host
KEEP THE GUEST LIST SMALL Bublé and Lopilato often like to limit their dinner parties to five or six people.
KEEP THE BAR STOCKED His wine cellar is lined with Beringer wines (a sponsor of his tour), and he favors scotch. As for beer, „I’m always out. My buddies drink it!”
KEEP THE MENU SIMPLE If all else fails, Bublé’s backup plan is to throw steaks from the local butcher on the grill. „Easy breezy! Great things come out of great ingredients.”
