Nie jem zbyt dużo mięsa, ale dla tego kurczaka robię raz na jakiś czas wyjątek :)
I am not a huge meat eater, but from time to time a make an exception for this chicken :)

Składniki:
3 pojedyncze piersi z kurczaka
1,5dl rodzynek
1,5dl orzechów włoskich
1 łyżeczka cynamonu
1 łyżeczka ostrej papryki
0,5 łyżeczki gałki muszkatołowej
0,5 łyżeczki startego świeżego imbiru
0,5 ząbka czosnku (startego lub zgniecionego)
pieprz
sól
1 łyżka masła
1 łyżka oleju
4 łyżki dżemu pomarańczowego
100ml soku z pomarańczy i cytryny (ok. 1,5 pomarańczy+1cytryna)
1,5 łyżeczki cukru muscovado (opcjonalnie, jak lubisz słodki sos)
Rozpłaszcz piersi -> natnij tak, żeby można je było rozłożyć na płasko i miały równą grubość na całej powierzchni lub rozbij, by uzyskać ten sam efekt
Rodzynki posiekaj z orzechami, dodaj ostrą paprykę, gałkę, imbir, czosnek i ok 1 łyżki dżemu (tyle, żeby nadzienie się skleiło) – dokładnie wymieszaj, dopraw solą i pieprzem do smaku
Na środek piersi nałóż nadzienie – zostaw ok. 1cm brzegów bez nadzienia – zwiń piersi tak, żeby nadzienie nie wystawało, zabezpiecz wykałaczkami*
Pozostały dżem, sok i cukier wymieszaj w garnuszku, podgrzewaj aż wszystko się rozpuści, zdejmij z ognia
Na patelni, na małym ogniu, rozpuść masło z dodatkiem oleju (olej podniesie temperaturę, w jakiej masło zaczyna dymić)
Ułóż nadziane piersi na patelni, przykryj pokrywką, smaż na małym/średnim ogniu – po kilku minutach podnieś pokrywkę – jak wierzch piersi się ugotuje (tzn. będzie lekko biały, a nie różowy), przewróć je na drugą stronę, posmaruj obficie sosem pomarańczowym i przykryj na kolejne 2-3 minuty – powtórz 3-4 razy, aż skończy Ci się sos**
Przełóż piersi na głęboki talerz lub do miski, przykryj i zostaw na ok 5minut
Odparuj sos, jeżeli jest zbyt rzadki
Pokrój piersi na ok. 1cm plastry, podawaj polane sosem np. z ryżem i surówką z fenkułem***
* wykałaczki wbijaj pod tym samym lub zbliżonym kątem, żeby nie było problemu przy odwracaniu piersi na patelni
** do smarowania używaj też karmelizującego się sosu z patelni
***fenkuł+roszponka+zielone jabłko granny smith+orzechy włoskie polane sosem z soku z pomarańczy, soku z cytryny, oliwy, soli i pieprzu

Ingredients:
3 chicken breasts
1,5dl of raisins
1,5dł of walnuts
1 tsp of cinnamon
1 tsp of hot peppers
0 , 5 tsp of nutmeg
0 , 5 tsp of finely grated fresh ginger
0 , 5 of garlic clove (grated or smashed)
black pepper
salt
1 tbsp of butter
1 tbsp of oil
4 tbsp of orange jam
100ml of orange and lemon juice (about 1 , 5 orange + lemon)
1 , 5 tsp of muscovado sugar (optional, only if you like sweet sauces)
make the breasts flat -> cut them the way that allows to make them flat and even in thickness or use meat tenderizer to achieve the same, flat effect
chop raisins and walnuts together, add hot peppers, nutmeg, ginger, garlic, about 1 table spoon of jam (enough to make all of the ingredients come together) – mix well, flavor with salt and black pepper
put the filling in the middle of each breast leaving about 1cm from the sides – roll breast so the filling is hidden, secure with string or toothpicks*
stir the leftover jam, juice and sugar (optional) in a small pot, heat up until everything melts together, take off the heat
melt butter with oil on a big pan and low heat (oil will avoid fast burning of the butter)
put stuffed chicken breasts into the pan, cover and fry on small/medium heat – after few minutes take off the cover – if the top of the breasts is cooked (is white, not raw and pink), turn them over, smear with orange sauce and cover for another 2-3 minutes – repeat about 3-4 times, until you run out of sauce**
transfer chicken onto a tray or into a bowl, cover and leave for about 5 minutes
let the sauce evaporate if it’s to runny
cut the breasts into 1cm slices, serve with sauce and f.e. rice and fennel salad***

*put all of your toothpicks into the breast on the same angle so it is easy to turn it over on the pan
**for glazing the meat also use sauce from the pan
***fennel + lamb’s lettuce + green Granny Smith apple + walnuts drizzled with sauce made of orange and lemon juice, olive, salt and black pepper
